How to Use a Pressure Canner

Pressure canners are guardians of your food. They guard and preserve the taste, nutrients, and the aroma of your food placed in glass jars. We’ve all heard about the wonders a pressure canner can do, but how should it be used?

Follow these steps and you’ll experience the wonders of pressure canning firsthand:

  1. First things first—examine your jars, lids, and bands. Check and see if there are no cracks, sharp edges, or small cuts. Don’t hesitate to use flat metal lids. You don’t have to sterilize the jars before pressure canning, just make sure you wash them in hot soapy water and rinse them with hot water as well. If there are trapped air bubbles, release them by using a bubble remover spatula down the sides of the jar.Your jars should be perfectly sealed.
  2.  Put 2-3 inches of hot water in the canner. Other canners may require you to add more water, so make sure you follow the directions with USDA processes for specific foods that need more water.
  3. Place jars on the rack. Do this with the use of a jar lifter, which should be positioned properly below the neck of the jar. The jars should stand up straight and they should not touch each other.
  4. Securely place the lid of the canner.
  5. Leave weight off vent port. Heat the canner at the highest setting until the pressure freely flows from the vent port.
  6. Let the steam flow for 10 minutes then place the weight on the vent port.
  7. This time, allow the canner to pressurize for the next 3-5 minutes.
  8. Begin timing the process when the pressure reading on your dial gauge says that recommended pressure has been reached. If you’re using a weighted gauge, wait for it to jiggle or rock.
  9. Regulate heat under the canner. This is for the maintenance of a steady pressure at or a little above the correct gauge pressure.
  10. When the timed process is over, turn the heat off.
  11. Remove the canner from the heat.
  12. If possible, let the canner depressurize on its own. Do not force it to cool since this may result in spoiled food.If you use the running cold water method before the canner is fully depressurized, it will cause loss of liquid from jars and the seal will fail.Cooling the canner forcefully will also distort the canner lid, especially if you’re using an old model of a pressure canner. Generally, most heavy-walled canners need 30 minutes to cool down if they are loaded with pints. If they are loaded with quarts, they require 45 minutes.
  13. Once the canner is done with the depressurizing process, remove the weight from the vent port.
  14. Wait for 10 minutes. Then carefully unfasten the lid and remove it.Lift it away from you to prevent the steam from burning your face.
  15. Using a jar lifter, remove the jars and place them on a towel. BE CAREFUL—THE CONTENTS ARE STEAMY AND HOT. Leave at least an inch of space between the jars during this cooling process.
  16. Allow the jars to cool at room temperature for 12-24 hours.
  17. Don’t let me stop here. Once your jars have cooled down, press on the lids and check the seals.The seals shouldn’t pop up; they should be sucked down. If one jar didn’t seal, place it in the fridge and eat within a few days.
  18. Remove the screw cap and wash the jar.
  19. Label the jar with the date and food type.This is beneficial especially if you have the same type of foods but didn’t can them on the same date.
  20. Lastly, store your jars in a cool, dark, most especially, dry environment.
